Hawaiian Meatball Kabobs

Ingredients

  • 1 bell pepper
  • 1/2 small red onion
  • 1 cup pineapple chunks

Meatballs

  • 1/2 pound lean ground beef
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Sauce

  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • Tablespoon cornstarch
     

Instructions

  1. Combine the sauce ingredients in a bowl and whisk.
  2. Cut pineapple, peppers and onion into one-inch pieces.
  3. In a bowl, combine the beef, eggs, soy sauce and spices.
  4. Use hands to form meatballs, using about 3 spoons of the mixture at a time.
  5. On the skewers, alternate meatballs and vegetables.
  6. Brush sauce generously over kabobs.
  7. Grill over medium heat for 15 minutes, turning once.
