Hawaiian Meatball Kabobs

Ingredients
- 1 bell pepper
- 1/2 small red onion
- 1 cup pineapple chunks
Meatballs
- 1/2 pound lean ground beef
- 1/4 cup breadcrumbs
- 1 egg
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- Tablespoon cornstarch
Instructions
- Combine the sauce ingredients in a bowl and whisk.
- Cut pineapple, peppers and onion into one-inch pieces.
- In a bowl, combine the beef, eggs, soy sauce and spices.
- Use hands to form meatballs, using about 3 spoons of the mixture at a time.
- On the skewers, alternate meatballs and vegetables.
- Brush sauce generously over kabobs.
- Grill over medium heat for 15 minutes, turning once.
