Ingredients
- 2 low carb tortillas
- 18 oz can crushed tomatoes
- Basil to taste
- Oregano to taste
- Garlic to taste
- Black pepper to taste
- A pinch of salt
- Sliced pepperoni
- 2 and ¼ cups of shredded mozzarella
- 2 teaspoons of oil
Instructions
- Preheat your oven broiler to high.
- To make the pizza sauce, add a can of tomatoes to a small pot on medium heat. Stir in the seasonings. Cover and simmer for about 12-15 minutes.
- For a crispy tortilla crust, add 2 teaspoons of oil to a hot cast iron skillet on medium high heat. Then, add the tortillas to the pan.
- Use a spoon to spread 2 tablespoons of sauce over each tortilla.
- Sprinkle mozzarella cheese over both tortillas and top with pepperoni slices.
- Place the pan in the oven for 1-2 minutes or until the cheese is melted and the pepperoni is lightly crisped.
- Take out of the oven, let cool and enjoy!
