Low carb pepperoni pizza

Ingredients

  • 2 low carb tortillas
  • 18 oz can crushed tomatoes
  • Basil to taste
  • Oregano to taste
  • Garlic to taste
  • Black pepper to taste
  • A pinch of salt
  • Sliced pepperoni
  • 2 and ¼ cups of shredded mozzarella
  • 2 teaspoons of oil

Instructions

  1. Preheat your oven broiler to high.
  2. To make the pizza sauce, add a can of tomatoes to a small pot on medium heat. Stir in the seasonings. Cover and simmer for about 12-15 minutes.
  3. For a crispy tortilla crust, add 2 teaspoons of oil to a hot cast iron skillet on medium high heat. Then, add the tortillas to the pan.
  4. Use a spoon to spread 2 tablespoons of sauce over each tortilla.
  5. Sprinkle mozzarella cheese over both tortillas and top with pepperoni slices.
  6. Place the pan in the oven for 1-2 minutes or until the cheese is melted and the pepperoni is lightly crisped.
  7. Take out of the oven, let cool and enjoy!
