Ingredients
- 1 pound elbow pasta
- 1 cup cauliflower
- 1/2 cup butter
- 4 tablespoons cream cheese
- 1 1/2 cups heavy cream
- 1 cup milk
- 4 cups Colby cheese, shredded
- 1 cup mozzarella
- 1 cup parmesan
- 1/4 teaspoon paprika
Instructions
- Boil cauliflower for 8 minutes, then blend in the food processor until creamy.
- Cook pasta on high for 11 minutes, strain then drizzle with olive oil.
- On medium heat, melt butter in a pan then add cream cheese and melt.
- Pour in the cream and milk.
- Lower heat and add seasoning and all of the cheeses.
- Once the cheese is melted, mix in the pureed cauliflower.
- Pour half of the pasta in your baking dish then layer 1/2 of cheese mixture before adding the remaining pasta.
- Top with remaining cheese and bake at 300 degrees for 15 minutes.
