Cauliflower Mac and Cheese

Ingredients

  • 1 pound elbow pasta
  • 1 cup cauliflower
  • 1/2 cup butter
  • 4 tablespoons cream cheese
  • 1 1/2  cups heavy cream
  • 1 cup milk
  • 4 cups Colby cheese, shredded
  • 1 cup mozzarella
  • 1 cup parmesan
  • 1/4 teaspoon paprika

Instructions

  1. Boil cauliflower for 8 minutes, then blend in the food processor until creamy.
  2. Cook pasta on high for 11 minutes, strain then drizzle with olive oil.
  3. On medium heat, melt butter in a pan then add cream cheese and melt.
  4. Pour in the cream and milk.
  5. Lower heat and add seasoning and all of the cheeses.
  6. Once the cheese is melted, mix in the pureed cauliflower.
  7. Pour half of the pasta in your baking dish then layer 1/2 of cheese mixture before adding the remaining pasta.
  8. Top with remaining cheese and bake at 300 degrees for 15 minutes.
